Day 79 : The Final Lap

.:The final Lap:.

After 79 days, we’ve finally finished our training in ClubMed.


Being a server, you have to have –

1. Patience
2. Average Product Knowledge
3. Problem solving skills
4. Good communication skills
5. Strong arms and fingers
6. Stable shoulder
7. Politeness
8. Good balancing skills


Being a bartender, you have to have –

1. 24/7 Patience
2. Full product knowledge
3. A quick thinking mind
4. Good problem solving skills
5. Good communication skill
6. Endurance
7. Team spirit
8. Superman’s strength
9. Sense of Humour
10. A very very wide smile


Being a Chef, you have to be/have -

1. 24/7 Patience
2. Professionally trained in giving excuses
3. 100% product knowledge
4. 110% independent
5. 120% bravery
6. 130% Humour
7. 140% respect for others
8. 150% creativity
9. 160% confidence
10. 170% endurance
11. 180% heat proof body
12. 190% team work
13. 200% stomach

Note – no.7 and no.12 doesn’t exist in ClubMed but everyone has no.13.

From horrible accommodation and being served inedible ‘food’, to being threatened and insulted, we’ve faced it all, over and over again.

Starting from the bottom isint always easy, and so is earning respect from others. No pain no gain, ritey?

Patience was key to everything. For example, waiting for cookies,brownies to be baked, takes time, waiting for choco mousse to harden, takes time.. cooking all the food, takes time, understanding others, takes time.. waiting for an empty toilet, takes time.. waiting for this very last day of work.. takes A LOT of time.

We have all the time in the world, just that we don’t use it wisely. (sounds funny coming from me) 24 hours a day. 8 hours of work, 8 hours of sleep and 8 hours of complaining of too much work and not enough sleep. What have you done today that you think wasn’t time wasting?

Voices of chefs and supervisors saying ‘ Eh hello, while doing this, you can do that too.. and that.. and that’ can be heard every time. All in the name of saving time.

.:Conclusion:.

I’ve learnt a lot, im proud to survive this long in this condition and I thank God for everything for this past 79 days. Its time to make funky drinks, chocolicious desserts and
hot hot hot dishes.

This blog has served its purpose for this 3 months and I will no longer update it. Haha thanks to Alric, Jac and Nic for all your support and to all my family and friends back home. =) We’ve made it!

Day 73 : Coverline for Dummies

Professional coverlines guide

1. ''Sorry, this dish will be ready in 10 minutes, please come back later sir''
Truth - no one is making the dish, you wont see it again.

2. "Yes, this is fresh squeezed juice.. ''
Truth - 'fresh juice' as in 1/10 squeezed juice and 9/10 concentrated juice mix together

3. ''..do try our Saffron sauce, its lovely''
Truth - Saffron never existed in the kitchen for the past few years

4. "..We're out of soy milk,sorry''
Truth - we have 5 boxes of it in the store

5. "..Yes, the lamb is cooked medium rare''
Truth - I'm not sure whether its even cooked, why don't you tell me?

6. "..Yes, we have clean fresh meat products''
Truth - Yes, it was fresh..before flies had a thanks giving party on it.

7. "..I'm sorry sir, i coudn't hear you, what drink would you like to have again?''
Truth - I know what you just said, but i don't how to make it.. so im killing time while i call for help.

8. "..Yes ma'am we have *oicjewojfnowne* over there, on your far left hand side''
Truth - what is *oicjewojfnowne*?! do we even have it here??!

9. ''The apple juice has a dark-cloudy colour to it, its normal as it oxidizes''
Truth - The blender we're using to make apple juice is also used to make pineapple, watermelon, carrot,honeydew and banana juice. Enjoy your fruit punch 'apple' juice.

10. "..We have the freshest juices.."
Truth - sooo fresh that we blend the fruit straight it's box without washing..hope you dont taste the sticker that was on it.

11. "..Good to see you again! How are you??"
Truth - YOU AGAIN!?

Day 62 : Day 61

Yesterday was our day off, so we went out to Kuantan for our weekly lepak session.

Day 60 : OoLaLa

Fish Salad

eaten raw.

Preparation Time : 10 mins
Marinating Time : 2 hours
Serves : Depends on how much you eat
Difficulty : Kacang putih
Rating : 6.98/10



Ingredients






a. 1 Cubed Tomato
b. some shredded coconut
c. Half a lettuce, rough chop.
d. Olive oil
e. 1 Shredded carrot
f. 1 shredded cucumber
g. coconut milk 100ml
h. optional - fried uncooked pasta(long ones), for garnish.
i. Salt, pepper and lots of dried chopped Basil.




For the fish

a. 1 kg fresh Dory fish ( or any amount you like)
b. Cut into cubes.
c. Marinate in Coconut water, little bit of santan, and lemon juice.
Reminder - coconut milk can go bad, and so can the fresh Dory ( to be eaten raw ).. so do marinate about 2 hours in the fridge. Lemon juice helps to counter the fishy taste and kills any 'bacteria'.





Whats Next?

In a big bowl, throw( or nicely put in) the shredded carrot, timun, tomato cubes, chopped lettuce and Dory fish into a big bowl. Add a few dashes of olive oil, salt, pepper and basil.
Adding more Basil will intensify flavour of the fish and the salad.. so throw in a whole bucket of it..im kidding, just make sure the salad and fish is covered with Basil.

Mix everything together like making rojak( dont so gila until nothing left in the bowl ). Do portioning on a plate, in my case was a triangular plate. Add as much santan by the side of the salad and add more basil.Add some shredded coconut flesh on top of the salad and lastly Cucuk a fried spaghetti into the salad as garnish.






End Result

Day 57 : Tapas

Egg Tapas from the Cold Buffet.
The first recipe I've learnt..funky recipe produces funky food.

1. 25 eggs
2. Chopped spring onions
3. Salt and Pepper

Mix all the above ingredients. Take a handful of small prawns(or anything you like) and cubed potatoes and place into a chaffing dish. Pour the mixture into the chaffing dish and bake for 40 mins at 150 Celsius.

For garnish, we use smoked mackerel and baked eggplants.

Day 55 : Monkeypox round 2

and is back home.. speedy recover Nic!

Four chinese junior chefs..



I'm in the Cold Buffet department whereby we prepare and serve raw dishes, such as.. shashimi, prawns, vege, fruits and etc. Other than that we prepare dishes like Potato Garlic salad, Eggplant Caviar, Baked Butterfish satay, light sushi and bla bla bla.

The smell of the chiller in the cold buffet is exactly the same as the garbarge storage..so its hard not to imagine that what we're preparing is garbage.. sadly, most of the food we prepare end up there anyway.

Kitchen life is way way way less stressful than life at bar, but looking at the standard of this kitchen.. I'd rather go back to bar.

Hellooooo!! Long time no see haha.. Jac and I finished our 1 month sentence at bar while Nic is going to the bar. Alric just started his 1 month prison term with us at the Kitchen. ahaha 'hurray'
