Day 60 : OoLaLa

Fish Salad

eaten raw.

Preparation Time : 10 mins
Marinating Time : 2 hours
Serves : Depends on how much you eat
Difficulty : Kacang putih
Rating : 6.98/10



Ingredients






a. 1 Cubed Tomato
b. some shredded coconut
c. Half a lettuce, rough chop.
d. Olive oil
e. 1 Shredded carrot
f. 1 shredded cucumber
g. coconut milk 100ml
h. optional - fried uncooked pasta(long ones), for garnish.
i. Salt, pepper and lots of dried chopped Basil.




For the fish

a. 1 kg fresh Dory fish ( or any amount you like)
b. Cut into cubes.
c. Marinate in Coconut water, little bit of santan, and lemon juice.
Reminder - coconut milk can go bad, and so can the fresh Dory ( to be eaten raw ).. so do marinate about 2 hours in the fridge. Lemon juice helps to counter the fishy taste and kills any 'bacteria'.





Whats Next?

In a big bowl, throw( or nicely put in) the shredded carrot, timun, tomato cubes, chopped lettuce and Dory fish into a big bowl. Add a few dashes of olive oil, salt, pepper and basil.
Adding more Basil will intensify flavour of the fish and the salad.. so throw in a whole bucket of it..im kidding, just make sure the salad and fish is covered with Basil.

Mix everything together like making rojak( dont so gila until nothing left in the bowl ). Do portioning on a plate, in my case was a triangular plate. Add as much santan by the side of the salad and add more basil.Add some shredded coconut flesh on top of the salad and lastly Cucuk a fried spaghetti into the salad as garnish.






End Result

Day 57 : Tapas

Egg Tapas from the Cold Buffet.
The first recipe I've learnt..funky recipe produces funky food.

1. 25 eggs
2. Chopped spring onions
3. Salt and Pepper

Mix all the above ingredients. Take a handful of small prawns(or anything you like) and cubed potatoes and place into a chaffing dish. Pour the mixture into the chaffing dish and bake for 40 mins at 150 Celsius.

For garnish, we use smoked mackerel and baked eggplants.

Day 55 : Monkeypox round 2

This time, Nic has successfully contracted chickenpox from Jac
and is back home.. speedy recover Nic!

Four chinese junior chefs..



I'm in the Cold Buffet department whereby we prepare and serve raw dishes, such as.. shashimi, prawns, vege, fruits and etc. Other than that we prepare dishes like Potato Garlic salad, Eggplant Caviar, Baked Butterfish satay, light sushi and bla bla bla.

The smell of the chiller in the cold buffet is exactly the same as the garbarge storage..so its hard not to imagine that what we're preparing is garbage.. sadly, most of the food we prepare end up there anyway.

Kitchen life is way way way less stressful than life at bar, but looking at the standard of this kitchen.. I'd rather go back to bar.

Day 54 : I'm Back.

Hellooooo!! Long time no see haha.. Jac and I finished our 1 month sentence at bar while Nic is going to the bar. Alric just started his 1 month prison term with us at the Kitchen. ahaha 'hurray'

Day 37 : Monkeypox

Jac is downed with Chickenpox, so hes going back tomorrow, for two weeks?.. man down man down!
haha, Nic hasnt yet had chickenpox..so all the best to you Nic =)




Btw, you see Nic with the bandage on his right hand? The story goes like this...

Adrian, Nic and I was walking out from clubmed and we had to go thru a 'forest'... somehow.. there was an adult monkey lepaking nearby. And so we thought it should be ok to pass by and so we did with stones in our hands for 'protection' (yeah right).

All of a sudden Adrian started running and so did Nic and I, all we could hear was lots 0f loud growling at the back but did not realised that there was a bunch of monkeys chasing after us!!! After I ran a for a few seconds.. i turn backed and saw Nic on the ground in pain.. not because of monkeys but because of his 'buy and throw away' sandals which didnt do its job when humans needed it most, caused him to trip. So yeah,the lesson is think twice before passing by monkeys and when buying footwear.

Its been a month plus since we've eaten anything non-halal..so we cant really rmmber what it taste like..haaha

Me : Eh, Adrian.. you sure this is pork?
Adrian : Why?
Me : Doesnt really taste like pork la..i cant remember what pork taste like..
Adrian : Hmm I oso not sure le..i cant remember oso..
Me : Huh? How long you never eat adi??
Adrian : Three months..
Me : How you survive?!?!

Day 34 : Funky


It was Halloween yesterday so we had a 'Harry Potter' theme at the Bar. I'm not a fan of Halloween day so I didnt bother dressing up.. until this guy below forced me to..haha

Life at Bar is tiring, working 7 hours straight into the night..the more the guest, the later we close kedai. Sigh, 3 more weeks to the Kitchen.
